A loose framework, not a packed schedule
- One sunset dinner reservation, booked well in advance, at a restaurant with a view — treat it as the one fixed commitment of the trip.
- One full boat day — a private or small-group catamaran cruise (see our sailing guide) makes a natural centrepiece day.
- One wine afternoon at a winery with a view, ideally ending near your own sunset rather than rushing back; see our wineries guide.
- Everything else, unplanned — late breakfasts, the pool or plunge tub, wandering Oia's quieter lanes without an itinerary.
